Dad's "Small Town" Pizza
Ingredients
Dough
- 3 - 4 cups Flour
- 1 cup warm Water
- 3 Tbsp. Olive Oil
- 1 tsp. Salt
- 1 Tbsp. Sugar
- 1.5 tsp. Active Dry Yeast
Sauce
- 1 small Yellow Onion, diced
- 1 8 oz. can Tomato Sauce
- 1 clove garlic, crushed
- 1 Tbsp. dried Basil
- 2-3 dashes Louisiana Hot Sauce
- 1 Tbsp. Sugar
Toppings
- 3 cups Shredded Mozzarella or "Pizza Blend" cheese

Choice of toppings - Our favorites are thick cut "cupped" pepperoni
and thinly-sliced Roma tomatoes.
Instructions

In a medium saucepan, cook onion in oil until tender. Add crushed
garlic, then tomato sauce, basil, sugar, and hot sauce. Stir and
adjust seasonings to taste. Cook 5 minutes, then remove from heat and
let cool.

In the mixer bowl, combine 1.5 c. flour and salt. Add oil and water;
run in the mixer on low. Gradually add flour in until dough is just
slightly sticky and thoroughly mixed. Form dough into ball and put in
a bowl greased with olive oil, turning once to cover top with oil.
Cover with a towel and let rise to double. Flatten and roll out to
shape desired and place on pizza pan or stone, 16 inch size works
best.

Preheat oven to 425 degrees. Pour sauce over dough and spread around
evenly. Spread grated cheese over top. Add any toppings on top as
desired.

Bake until cheese is bubbly and lightly browned and the underside of
crust is golden.

"I have been experimenting with making pizza for years, and the recipe
for both the crust and the dough started out quite a bit different than
it is now. After many, many pizzas, I think I've about gotten it down.
Our family really likes thinly-sliced Roma tomatoes as a topping." - Dad
